Beetroot Black Bean Burger

This crowd favourite hits all the markers and caters for all diet types. Beetroot is great for increasing blood flow and has even been found to increase exercise performance. These burgers are packed full of fibre—you’ll be satisfied for hours!

 

Beetroot Black Bean Burger

Serves 4
(Vegan, DF, GF & RSF)

Ingredients:

Beet burger
1 large beetroot, peeled and diced 1/2 red onion, chopped
400g black beans
1/2 cup walnuts
2 eggs
2 teaspoon paprika
1 teaspoon cumin
1 teaspoon dried thyme
Pinch sea salt and black pepper

Assemble
4 burger buns (GF optional) 2 avocados, mashed
1 cos lettuce
1 tomato, sliced
1 cucumber, spiraled
1 cup alfalfa sprouts
1 cup coriander
4 tablespoon vegan aioli

Method:
1. Preheat oven to 200oC. Line a baking tray with baking paper.
2. Place diced beetroot and red onion in a high-speed blender and pulse until partially combined. 3. Drain and rinse the black beans and add to the blender. Pulse again until well combined. Add

walnuts and pulse again. Be careful not to over mix, you still want small chunks of vegetables

and beans.
4. Transfer the mixture to a large bowl and add the cracked eggs and spices. Mix well with a

wooden spoon.
5. Roll the mixture into 4-5 large patties. Place in the oven and bake for 15 minutes, flip and bake

for another 5 minutes.
6. Assemble your burger, starting with smashed avocado, lettuce, tomato, beetroot patty,

cucumber, alfalfa sprouts, coriander and aioli.
