
Sticky Salmon with Asian Greens
Feb 12, 2023A flavoursome yet super simple salmon recipe. Salmon is high in omega-3 fatty acids which helps lower blood pressure, keep inflammation down and improve heart health and cognitive function – not to mention it keeps our skin and hair shining! Salmon is great to incorporate x3 days weekly, making this an ideal meal prep recipe.
Sticky Salmon with Asian Greens
Serves 2
(DF, GF & RSF)
Ingredients:
2 salmon fillets
1/2 cup black wild rice
2 bok choy, halved
1/2 shallot, thinly sliced
1/2 cup spring onion, sliced
1/2 cup coriander
1 tablespoon black sesame seeds 1 lime, cut in wedges
Salt and pepper to taste
2 tablespoon tamari, to serve
Marinate
2 teaspoon fresh ginger 2 garlic cloves
1 tablespoon tamari
2 tablespoon fish sauce 1 tablespoon honey
1 teaspoon tobasco
Method:

Combine marinate ingredients in a large shallow bowl and mix well. Add in the salmon fillets
and coat them evenly. Cover and marinate for at least 30 minutes.

Bring a medium sized saucepan to the boil and cook wild rice according to packet
instructions.

Using a seperate saucepan with a steam basket, boil water and place bok choy in the basket.
Cover and allow to steam for 5-7 minutes. Remove from heat once the bok choy is soft and
tender.

Heat grill on a medium setting and place tray 25cm from the heat source.

Place salmon on baking tray and pour excess marinate over the salmon. Grill for 10 minutes or
until the top of the salmon is caramelised.

Serve on two plates. Start with a bed of wild rice, bok choy and salmon fillet. Garnish with
spring onions, coriander, sesame seeds, lime wedge and salt & pepper to taste. Pour tamari sauce over the asian greens.
