Sashimi Salmon Poke Bowl

This hits all the macronutrients we need in one meal. Protein from the salmon sashimi and edamame, healthy fats from the sashimi, avocado and macadamia nuts, and complex carbohydrates from the brown rice. A great option for mid-week lunches.

 

Sashimi Salmon Poke Bowl

Serves 2
(DF, GF & RSF)

Ingredients:
1/2 cup brown rice
1 avocado, sliced
1/2 cup macadamia nuts
1/3 cup spring onions, sliced
1/3 cup red cabbage, roughly chopped 2 radish, thinly sliced
200g sashimi salmon
1/2 cup edamame
2 teaspoons black sesame seeds
4 tablespoon tamari
1 lime

Method:

  1. Bring a large pot of water to the boil and cook brown rice according to packet instructions.

    Once cooked, drain and set aside.

  2. Begin assembling your poke bowl by dividing the brown rice into two serving bowls. Place in

    the sliced avocado, shredded cabbage, macadamia nuts, sliced radish, edamame and spring

    onion.

  3. Place the sashimi in the centre of the bowl and juice half a lime. Season with salt, pepper and

    sesame seeds. Cut the remaining half of lime into wedges for serving. Pour over tamari dressing.
