
Grain Free Seeded Loaf

Grain Free Seeded Loaf
DF, GF, RSF, Vegan Makes 1 loaf (10 slices)
INGREDIENTS:
1 cup sunflower seeds 1/2 cup sliced almonds 1/2 cup pepita seeds 1/2 cup psyllium husk 1/3 cup chia seeds
1/3 cup flax seeds
1/3 cup hemp seeds
2 teaspoons black sesame seeds 2 teaspoons monk fruit
1 teaspoon sea salt
1/4 cup extra virgin olive oil
1.5 cups boiling water
METHOD
Preheat oven to 200oC. Grease a loaf tin with olive oil and set aside.
In a large bowl, combine all ingredients except boiling water. Mix until all ingredients are combined well. Pour in boiling water and mix well again. You should have a thick dough like consistency.
Add mixture to the tin loaf and pat down evenly and firmly. Cook for 50 minutes and allow to cool for 2 hours before removing loaf from the tin. Wrap tightly and store in a cool place in your kitchen for up to 5 days.
