
Chilli Scrambled Eggs with Greens
Nov 23, 2023Our creamy chilli scrambled eggs are a classic breakfast staple. You’re hitting all the macronutrient markers in this recipe with an added metabolism boost from our chilli oil. Pair with a slice of our Grain Free Seeded Loaf and you’ll be fuelled for hours!
Chilli Scrambled Eggs with Greens
DF, GF, RSF Serves 1
INGREDIENTS
1 teaspoon extra virgin olive oil 2 eggs
1/4 cup coconut cream
1/4 teaspoon ground chilli
Sea salt & pepper, to taste
1 cup baby spinach
1 tablespoon spring onion, finely sliced
2 teaspoons baby capers
Fresh dill, to serve
Fresh coriander, to serve
1 teaspoon black sesame seeds
1/4 avocado, sliced (optional)
1 slice of Grain Free Seeded Loaf (see notes)
Chilli Oil
1/4 cup extra virgin olive oil 2 tablespoons chilli flakes 2 teaspoons sea salt
METHOD
In a small skillet, heat olive oil over medium heat.
In a pouring cup, scramble eggs and coconut cream together. Stir ground chilli, sea salt and pepper together well. Pour into the skillet and cook for 30 seconds. Once the edges are set, begin to fold the mixture gently in a circular motion using a spatula.
Once eggs are cooked place them over the seeded bread slice. Cover the other half of your plate with the remaining greens, cherry tomatoes and avocado if desired. Sprinkle sesame seeds and drizzle chilli oil over everything.
