
Spicy Green Shakshuka

Spicy Green Shakshuka
2 (GF & RSF)
Ingredients:
4 eggs
2 tablespoon extra virgin olive oil 1 red onion, diced
3 garlic cloves, minced
1 small zucchini, diced
1 jalapenĚo pepper, chopped
1/2 teaspoon cumin
100g spinach
3/4 cup frozen pea
1/2 cup spring onion, chopped 1/4 cup bone broth
1/4 cup coriander
1/4 cup chives
2 tbsp goats cheese
Salt pepper
Method:

Preheat oven to 180oC and heat olive oil in a 10-inch ovenproof skillet over medium heat.

Add in onion, garlic, jalapenĚo, zucchini, spices and seasoning. Stir frequently for 5-7 minutes
until the onions are tender and fragrant.

Pour in broth, bring mixture to a simmer for 2-3 minutes. Add in spinach, frozen peas and
spring onions, continue to simmer while covered for another 5 minutes.

Make 4 small wells in the mixture and crack in the eggs. Transfer skillet from the stove to the
oven and cook for 10 minutes. If the mixture crisps too much, cover the skillet with aluminium
foil to prevent it from burning.

Remove the skillet from the oven once the eggs are cooked and serve up 2 plates. Garnish
with coriander, chives and goats cheese.
