
Italian Chicken Spinach Meatballs

Italian Chicken Spinach Meatballs 🍝
1 kg chicken mince
2 eggs
1 cup Panko Breadcrumbs
1 bag spinach “finely chopped”
2/3 cup grated Parmesan
3-4 tbsp Italian herbs
4 mince garlic cloves (or 2 tbsp garlic powder)
2 tbsp Tomato paste
Kosher salt
Oven 170 degrees.
Bind together eggs, breadcrumbs, spices, Parmesan and tomato paste in a bowl. Lastly add chicken and chopped spinach. Combine together using hands or a fork.
Shape the mixture into 16 large meatballs and arrange them in a prepared baking dish. 1-inch apart, so they do not touch.
Drizzle with olive oil.
Bake for 20 minutes or until cooked through.
Serve with side salad, spaghetti squash, zucchini noodles or anyway you choose.
