
Cherry Brownies
Dec 14, 2023These are our gooeyest gluten free brownies yet! Cherries are a great low GI source, containing many vitamins and minerals that help fight oxidative stress and inflammation. You certainly won’t have any guilt after tasting these!
Cherry Brownies

Makes 10 slices
INGREDIENTS
150g ghee
100g + 2 tablespoons monk fruit
3 eggs
3/4 cup GF plain flour
1/2 cup cacao
1/2 teaspoon baking powder
1/2 teaspoon sea salt
200g 85% dark chocolate, roughly chopped 250g cherries, pitted & halved
Coconut yogurt, to serve
METHOD
Preheat oven to 160oC and line a square baking tray with baking paper.
In a small saucepan, melt ghee with 2 tablespoons of monk fruit. Stir slowly until dissolved and set aside to cool.
In a medium bowl, whisk eggs and the remaining monk fruit together. Pour in the cooled butter and sugar mixture and whisk again until well combined.
In a seperate bowl, mix together flour, cacao, baking powder and salt. Pour wet ingredients into dry and combine (don’t over-mix). Add in dark chocolate and cherries and gently fold. Pour into your baking tray, using a spatula to evenly spread.
Bake for 30-35 minutes, or until the top layer is crispy with a few cracks in the surface. Allow to cool to one hour before slicing into 10 pieces. Serve with a dollop of coconut yogurt and enjoy!
